I'm sure many of you are part of different groups. Maybe a book-club or a sports team? We go to these clubs because we have similar interests to the members. I love baking so let me introduce you to a club that I'm in at school... First Thursdays Baking Appreciation. Sounds quite interesting right? Well pretty much it's a group of us who get together on the first Thursday of every month to share something that we have baked a.k.a we appreciate baking in the form of eating it. We share our recipe, talk about it and then eat. So as you can guess it's probably one of my favourite clubs.

This month I decided to make chunky chocolate chip cookies for baking appreciation. A bit of a difficult mouthful but i can guarantee you that a mouthful of these delicious cookies won't be difficult!

So let's get started....

Things you'll need:

  • 1 cup of caster sugar
  • 125g of butter, softened
  • 1 cup of brown sugar
  • 1 teaspoon vanilla essence
  • 2 eggs
  • 1 teaspoon of baking soda
  • 2 tablespoons of hot water
  • 3 cups of plain, all-purpose flour
  • 1 cup of chocolate buttons (i used milk chocolate but you can use whatever ones you prefer)

First you want to start off by creaming the butter and both sugars.

Next, add the vanilla and the eggs one by one, slowly beating after each addition. 

Dissolve the baking soda in the hot water and add to the mixture. Sift in the flour and mix well. 

Lastly add the chocolate buttons (i tend to add them to taste rather than measuring ;) woo)
Roll the dough into golf ball sized balls and place on a baking tray lined with baking paper.

Make sure you have preheated your oven to 175'C because the biscuits will need to bake for 10 minutes. Once they're out of the oven they can be eaten immediately ;)
