On the 16th of July, I turned 17 and of course birthdays call for cake! Here's the recipe for my delicious butter cake with lemon cream cheese icing and salted caramel sauce...

Butter Cake

Cream 150g of butter, 1 teaspoon of vanilla essence and 3/4 cup of sugar until light and fluffy. Add 2 eggs, one at a time, beating well after each addition. Sift 1 1/2 cups of flour and 3 teaspoons of baking powder together. Fold into creamed mixture. Add approximately 3/4 cup of milk to give a soft dropping consistency. Spoon the mixture into a greased and lined deep 20cm round cake tin. Bake at 180'C for 35 to 40 minutes or until cake springs back when lightly touched.

Salted Caramel Sauce

Heat 200g (1 Cup) of sugar in a saucepan. Once it is completely melted, add 90g of butter. It will take about 2-3 minutes for the butter to melt completely but be careful because it will bubble. Drizzle in 120ml of heavy cream very slowly. Then leave to boil for 1 minute. Once the mixture has cooled down slightly, stir in 1 teaspoon of salt (more or less dependent on your preference)

Lemon Cream Cheese Icing

Sift 2 cups of icing sugar into 250g of cream cheese icing until the mixture is soft and smooth. Next, add the lemon juice to your preference (I though 1 lemon was did the job!)


1. Cut the cake into four layers. I find that the easiest way to do this is to get someone to hold the cake for you and use a sharp knife.
2. Next, spoon your icing into a piping bag with a round 2inch nozzle and pipe malteser sized rounds across the entire surface of the cake. Repeat with all layers but only pipe 2 layers thick around the outside on the top of the cake.
3. Spoon salted caramel into the middle of the cake, on the top before completing the cake with flowers of your choice for decoration. Remember to wash the flowers thoroughly and do not eat them (they're simply there to make the cake looks insta-worthy :P )
