These chocolate truffles have a double WOW factor. They are delicious AND non-guilty healthy treat! I'm not usually into healthy baking because taking sugar out of baking is like taking the egg yolk out of an egg.... but these were seriously good!

Full credit goes to Dr Libby Weaver and this recipe and more healthy but super yum dishes are available in her cook book 'The Real Food Chef'. 
At the bottom of each recipe she also has a little paragraph about the nutritional information of the dish and these truffles are filled with goodness.

''A must for a perfect complexion, magnesium and zinc are found in high proportions in pumpkin seeds. These truffles, rich in both of these minerals as well as antioxidants and fibre, make a wonderful and satisfying snack''

Let's get started!

Things you'll need:

  • 1/3 cup cacao powder
  • 1/2 cup of desiccated coconut
  • 8 fresh dates, pitted and coarsely chopped 
  • 1/4 cup of pumpkin seeds
  • 1/4 cup of sunflower seeds
  • 1/4 cup of water 
  • a pinch of salt 
First start off by combining the cacao powder with the seeds and pulse everything in a food processor  until combined.

Next, add the chopped dates to the mixture in the processor and pulse again until the ingredient begin to form a dough. Add water to the smooth mixture and pulse for a few more minutes.

Roll a portion of the mixture between you palms to form medium sized balls. I found the mixture a bit crumbly so I added more water. Lay them on a sheet pan lined with waxed paper. Chill the truffles until they're ready to use :) 

To finish them off Dr. Libby recommends rolling them in cacao nibs, finely chopped pistachio nuts or crushed buckwheat cereal for a finishing touch. I found that rolling them in cacao powder or raw sugar  was also delicious but you could pretty much use anything that will stick.

These truffles are absolutely perfect for a dinner party dessert or wrap them in some foil and give them as a gift!
